    Apple Pie Oatmeal

    Apple Pie Oatmeal
    Category: Breakfast

    This recipe is suitable for a: vegetarian/vegan diet


    Preparation Time: about 20-30 min minutes
    Serves: 4


    Ingredients:
    -----------------------------------------------------

    2 1/2 cups old fashioned oatmeal
    ground cinnamon
    ground nutmeg (dash)
    vanilla extract
    sugar (white and brown)
    3 apples (I used Fuji)
    Earth Balance spread (or whatever you prefer)


    Instructions:
    -----------------------------------------------------

    First , prepare the apples by peeling them. Then dice them whatever size you want them.

    Second bring about 4 3/4 cup water to a boil. As soon as it begins to boil, ( point where you see tiny bubbles, but not a rolling boil )stir in the oats slowly and continue to stir while they're boiling. Cook the oats until the glutinous liquid cooks out. That is what I usually do. It seems to have a better texture that way.

    When the oats are cooked, that is when you stir in the spices and apples. Basically you just add the spices to your taste. Stir 'em in real good. It’s good when you aren't shy with the spices, especially cinnamon.

    Add the vanilla and sugars to taste as well.

    To top it off, add a pat or two of earth balance, and there you go.

    Additional comments:

    I used both brown and white sugars...but you can easily just use one or sub with maple syrup or whatever sweetener you choose.

    Also, you can throw in a few raisins at the end....this is also quite delicious! Enjoy!

    This sounds so good! If you put the raisins in at the beginning, they will plump and be so tender and juicy.

    The maple syrup is a great idea. I also thought of Agave or Honey if you use it.

    Earth Balance is a brand of vegan margarine. I`m sure you could sub another brand of vegan margarine (or dairy-based margarine if you use it).

    wow wow wow sounds like a really healthy desert! almost like a runny flapjack or something mmmmm.
