Oh Toast, veggie pasta is my weakness! I can eat fettucine tossed with roasted peppers, broccoli and olive oil 7 days a week. What did you top your onion/tomatoes with? I'm partial to balsamic vinaigrette. * By the way, there is a US comedian who made an hysterical tribute to toast. Heard it? Ya Toast!*

I usually use apple cider vinegar, virgin olive oil, sea salt and black pepper and maybe a sprinkle of herbs too. Yum! I love balsamic too though. (I haven't heard the tribute to toast, maybe I should.)
