Just curious why you'd peel a nectarine? The skins are quite tender/never heard of anyone not eating one, and the fruit would turn dark if cut too far ahead of time...

If it were me, I'd be making Earth Balance, Marmite, and Avocado sandwiches on whole wheat. What about baking a batch of muffins to munch on? They're pretty filling.

I'm making the 12 hour trek to South Carolina (again) on the 12th.
I bake a batch of yummy oatmeal cookies to satisfy my junk food cravings.
I used to love cream cheese and olives on a bagel, so now I make it with Tofutti Cream Cheese and olives instead. Very portable and easy to eat.
I do travel with a cooler to pack some of the items that I can't find when I down there. I make a tray of eggplant 'parm' so I have something to eat when I'm down there. I pack a sandwich of that for the road too.

Finally made it back! I ended up making a huge pasta salad with yellow squash, red onion, carrot, broccoli, red & orange bell pepper,toasted chickpeas with a balsamic vinaigrette for dressing.
French bread and sharp cheddar on the side was perfect. I got inspired last minute to cook like crazy and it turned out wonderful![]()
We are taking a road trip from Cali to Mississippi next month for Xmas. It will take us a couple days to get there. I plan on bringing a cooler packed with veggie sandwiches and veggie snacks. I want to eat healthy since we wont be hitting the gym.
