    Need help with food for a road trip

    Hi,
    I'm not new to vegetarianism but I am new to attempting to drive eight hours while being a vegetarian. I'm on a budget so I want to bring my food along with me but I just can't think of anything. To add more problems I don't eat nuts or fake deli slices. I just want something easy pack up and eat on the go. For some reason I just can't wrap my mind around this problem

    How about some chickpea "egg" salad sandwiches?
    Tomato and cheese?
    PB&J?

    Hummus, and lots of stuff to dip in it :P

    Or drive twice as fast and eat when you get there. Don't get pulled over for driving twice the speed limit though. I hear the vegetarian cuisine in jail is kind of bleh.

    Tomato and cheese sounds good and easy.

    Wow driving through North Carolina is dangerous enough driving at the speed limit I think I'll stick with the hummus

    It's hard to find them without nuts If you know some brands without nuts you must tell me now cause I love granola bars.

    Are you bringing a cooler? How about individual cups of yogurt or cottage cheese? Or cheese and crackers? Or a cheese sandwich?

    Apples, bananas, grapes, baby carrots, cut up bell peppers, raisins or other dried fruit. Pretzels, soy crisps. PB & J, as already suggested. Those are all easy to eat while driving... not that I'm condoning that of course, but I admit I do it sometimes on road trips.

    I am taking a cooler with me. Cheese is really good.

    I plan on stopping to eat My biggest thing is I want to find something filling so I don't have to stop too often.

    Lots of good ideas I think I'm gonna mix all of them together and come up with a menu.

    I'd pack food and not stop but once or twice to stretch my legs and use a bathroom. So I'd pack a thermos of coffee (or tea), lots of water, a meal of either a veggie wrap cause that's one-hand eating, soup in another thermos, or just a good sandwich of cucumber hummus and tomato, and I'd pack snacks of carrots, apples, and chips cause I'm a chip-a-holic on road trips.

    Other fun things might be some very thin marinated and baked BBQ tofu, grapes, pretzels, pre-pealed nectarines, veggie quesadilas, chikn nuggets, etc. That's about half healthy stuff half junkie stuff. It is a road trip, afterall Have fun!

    Big jar of peanut butter, a knife and some crackers. And a stash of Powerbars/Clif Bars. Not interesting but kept me going for a week before.
