    Today's menu is the same as yesterday, except for dinner, which is simmering in the kitchen as I type. I am making a vegan lentil soup with chunks of sweet potato in. It should be nice and nutritious and hearty and just what I need to combat my illness. I have been craving lentil soup for a while, so hopefully my little improvised version hits the spot. Who needs a stinkin' recipe? Not this girl...

    **4pm** I just finished my soup. Amazingly satisfied with the end result. All day in the fridge always makes soup better. I am fixing more tomorrow.

    For those of you who want to try, it was: onion, celery, carrot, garlic, lentils and sweet potato cooked in veggie broth, seasoned with salt, pepper and a couple bay leaves. The sweetness of the potatoes really did something magical to the flavour of the broth.

    b/l - smoothie w/ spinach, orange juice, baby carrots, frozen raspberries, grapefruit, and banana

    d - probably half of an amy's cheese pizza

    B- Homemade whole wheat vegan pumpkin pancakes w/ protein powder (I used my waffle batter but tried a different cooking method.)

    L- Same as yesterday. I ignored the temptation of the cupcakes my coworker brought in too. I am gonna overeat plenty on Thursday, so I'm trying to stay sensible now. Plus they were probably full of all sorts of unfavourable ingredients, if she made them from a packaged mix.

    D- Another batch of lentil soup w/ diced sweet potato. It turned out so tasty yesterday, I had to make it again. This "recipe" is a keeper.

    S- 2 bite-size, gluten-free vegan ginger snaps from www.lizlovely.com. They were a tad dry, I might have some tea.

    S- (When I finally get home from work) 2 Weetabix, sliced banana and almond milk, heated

    Vegan day yesterday:

    B = Banana, tea with soya milk
    L = WW sandwich with vegan spread, veggie "bacon", vegan cheese, cucumber and English mustard
    S = 1 piece carob bar
    D = Savoury vegetable rice, steamed greens, 4 clementines

    Vegetarian since April 1992 but mostly vegan.

    Breakfast= 2x Weetabix with 100mls strawberry and banana smoothie poured over the top.
    Lunch= Had a bit of the crust of my dads vegan birthday cake and 2 coffee biscuits.
    Dinner= Stir fried vegetables.

    Now there's a thought. I have been having Weetabix with sliced banana and almond milk heated up for snack the past few evenings, maybe I should try making a smoothie... How was it?

    My menu so far:

    B- It was time to switch it up to something I love just as much, if not more, than pumpkin things.... carrot cake. So today's breakfast is homemade whole-wheat vegan carrot cake waffles w/ raisins and protein powder. Mmm...

    L- I have *just* enough veggies left to make another batch of lentil soup with sweet potato before I go grocery/Thanksgiving shopping, so probably that.

    More to come later...

    It's pretty good but I think it needs a splash of water or soy/almond/rice milk to soften it up properly if you like your cereal softer but I prefer my cereal more or less dry.
